My appointment with Lenscrafter’s today was at 3pm.  I got home at 730pm!   I went in for an eye exam; new glasses; and to be fitted for contact lenses.  I wear tri-focals, so I was real curious as to whether or not they were going to agree to fit me for contact lenses.  They did agree to fit me for lenses, but it took FOUR tries to find the one that should work.  At least, I am hoping they are going to work!


My daughter Heather and two of my grandchildren, Alaina and Kyler, were here for the weekend.  She got here Friday night, and just went home this morning.  It was a nice weekend.  She’s trying her hardest to find a car to buy.  She has our old mini-van that is on its leg, so she needs one pretty bad.  Wednesday is her birthday, and it “looks” like she may have found one and could be picking it up on WEDNESDAY!! 🙂  What a nice birthday present to herself, huh? 🙂  I really hope she gets the one she wants.


Sunday was on our youngest Grandson’s birthday.  Jayden turned 4 years old!  It sure doesn’t seem possible that he is 4 already!  He had his birthday at Chuck E Cheese.  He had a great time, but there were two other birthday parties going on right next to his, and he got a bit overwhelmed with it all.  It came time to blow out his candle, and he was just “lost”!!  Poor thing had so many people pulling him in so many directions, and giving him so many instructions, he just froze!  It was kind of cute, but I felt bad for him, too.  We helped him blow out his candles, and then it was time for the gifts! Now THAT he got into!! LOL  He loved his gifts!  It was really cute as he opened each gift and then said thank you to those that gave him the gifts.  He is just a cutie pie!


Tomorrow night I am going to the FFA Auction here at our local high school.  They will be auctioning off the bird house that one of the FFA kids made, and my husband painted.  The kid, Devan, was so thrilled with how the painting turned out.  Gary, my husband, did such a good job with it.


So, Molly & Jason are getting married tonight.  Remember them?  From the Bachelor show?  He dumps one girl and goes for another, after he had already proposed to the first girl!  Not only that, but he dumps the first girl on National Television in front of MILLIONS of people!!

From what I am seeing tonight though, they both made the right choice to be together!  In the middle of their wedding, the rain just POURED down in buckets….on their outside wedding!!  Poor things were just drenched!  Everyone else had umbrella’s except for the bride and groom!  But they smiled throughout the whole thing!  Gotta love ’em!  🙂


Better get off of here for now….but you guessed it, before I go, I would like to share a recipe with you!  I hope you enjoy this recipe as much as we did!

Strawberry, Melon & Spinach Salad

1 Tbsp each orange juice and honey
1 1/2 tsp olive or vegetable oil

3 c bite-size pieces fresh spinach
1/2 c each sliced strawberries and cubed cantaloupe
2 medium green onions, sliced (about 2 Tbsps)

In lightly covered container, shake all dressing ingredients.
In large bowl, toss all salad ingredients with dressing.

60 Calories
2 g Fat (0g sat fat and trans fat)
0 mg Cholesterol
9 g Total Carbohydrates

Date Night

We’ve been married just over six year.  At least twice a month, we have a Date Night.

Date Night can be anything from a night in a hotel room to taking a walk in a local park!  It’s whatever the budget allows.  But, no matter what the budget says, we always do something every month!

Tomorrow night is Date Night.  We have decided to go see a movie and grab a bite to eat.  We are members of the Five Buck Club; which allows you to see current movies, still in the theater, for just $5.00.  You can get a membership with Five Buck Club by clicking HERE.  Once you complete your membership, you will receive a membership card in the mail.  You present this card at the theater you signed up for, and the movie simply costs $5.00!! 🙂  It’s a fun way to save a couple dollars!  (Now if we can just figure out how to save money on the drinks and popcorn!! LOL)


Saturday, my husband is taking our youngest daughter car shopping.  She is driving the minivan that we gave her a couple of years ago, and it’s begun to have some problems.  Instead of dumping money into it all the time, she’s decided to find something different.  She’s found so many cars that she would just LOVE to have, but can’t seem to get the kind of deal that she wants, and needs.  So “Dad” is going with her, to help her out.  I hope they are able to find something!

Wednesday of next week is her birthday, too.  So after they are done car shopping, I am taking her out for her birthday, to Olive Garden.  Grandpa’s gonna stay home and watch the kids, while we go enjoy a wonderful meal, and those Breadsticks!!! Oh my goodness, do I love those Breadsticks!  Makes my mouth water just thinking about them!


Sunday we are celebrating the 2nd youngest Grandson’s birthday, which isn’t until next Saturday.  We are meeting at Chuck E. Cheese for his birthday party.  Should be a fun time for all!  I can’t believe he’s 4 years old already!  He sure is a cutie pie!  And LOVES to make people laugh!  He will do anything silly just to get you to laugh at him!  I love it!  For so young, he has a great sense of humor.


Next week, there are four houses to clean on my schedule.  Busy week.  Then Tuesday night we are going to an FFA Auction at our local high school.  One of the students built a bird house, and my husband painted it for him.  It turned out so cute!!  The bird house will be auctioned off.  I pray he makes a lot of money off of it, for the FFA.  The kid was so tickled with the way it turned out.  He kept saying “Thank You” over and over again!  It did our hearts some good to be able to help him out.


Tomorrow is going to be a GOOD day!  For the first time since we’ve been married, we will have NO CREDIT CARDS!  Our last credit card will be PAID IN FULL tomorrow; and a couple of other bills, too.  Once these are all paid, that will leave us with just the mortgage and a motorcycle payment!  Everything else will be GONE; along with a major dent made in the motorcycle balance, as well.  So by the end of the year (if not sooner), we will have the bike paid off, too!  I can’t tell you how good this feels!  It is such a relief to have all of these things paid off.  It’s taken us just over a year to get this done!  But praise God, it’s done!  Woo Hoo!!! 🙂

Amazing Grilled Sweet Potatoes
This is a recipe I created the other night for dinner.  The potatoes were awesome!!  Hubby really enjoyed them, too!
2 medium sized Sweet Potatoes
1/2 cup of Brown Sugar
1/4 cup melted butter
2 tbsp of Garlic Salt

Wash and slice Sweet Potatoes

In a large glass bowl, heat the brown sugar, butter, and garlic salt for 1 minute in the microwave; until the butter is melted.

Place the sliced sweet potatoes in the glass bowl and coat the slices with the brown sugar mixture.

Place on HOT grill (George Foreman works perfect), and grill until tender!

1 2/3 cups water 2 tbsp. nonfat dry milk powder 2 tbsp. shortening 2 tbsp. honey 2 tsp. salt 2 1/2 cups all-purpose flour 1 cup whole wheat flour 3/4 cup five-grain cereal 1 1/4 tsp. active dry yeast

In a bread machine pan, place all ingredients in order. Select basic bread setting and bake according to bread machine directions.
2 large chicken breasts, boiled with 1 small diced onion; and about 2 TBSP of Poultry Seasoning.

When chicken is done, let it cool and then shred it. Add to a 6-quart crock pot the following ingredients:

1 can whole kernel corn
1 can french style green beans
1 pkg Hidden Valley Ranch Dry Mix
2 TBSP Garlic Salt
2 cans Cream of Chicken Soup
1 can Cream of Mushroom Soup
2 cups of Chicken Broth
And diced chicken

Simmer all ingredients together for about 6 hours in crock pot. YUMMY!!!!!

As I typed 2010, it hit me WOW, 2010!!  It sure doesn’t seem possible that we should be saying 2010 already!!

Anyway, back on board here.

I’m sitting here watching American Idol.  I don’t know about you, but I really don’t think this year has much for the WOW Factor that the Judges talked so much about last year.  I do think the gals are better than the guys this year!  My favorite for tonight is Siophan.  She sang Aretha Franklin’s “Think” tonight, and did a great job!!  I loved it!  I like Crystal Bowersox too.  I think she has a unique voice.

As far as Ellen as the new Judge….well, I’m not real impressed with that either.  I’m confused as to why she was even chosen!  I don’t understand that.  What musical background does she have that qualifies her as a Judge for this competition?  I feel her comments are repetitive of what the other Judges are saying; like she’s just copying everyone else because she doesn’t know what to say!  I don’t know…but I think she needs to increase her vocabulary when it comes to competitions and talent in order to better express herself individually.


Last night, I made an amazing Chicken recipe that I want to share with you before I close.  I served it with Brown Rice.  It was really good!



* 2 (18 ounce) Sweet Baby Ray’s BBQ sauce
* 1 (15 ounce) can pineapple chunks
* 1 green bell pepper, chopped
* 1 onion, chopped
* 8 boneless, skinless chicken breast halves


1. In a large bowl, mix together barbecue sauce, pineapple with juice, green bell pepper, onion, and garlic.

2. Arrange 4 of the chicken breasts in the bottom of a slow cooker. Pour half of the barbecue sauce over the chicken. Place remaining chicken in slow cooker, and pour remaining sauce over the top.

3. Cover, and cook on Low for 8 to 9 hours.
